Whether you’re a die-hard charcoal fan, or more of a Hank Hill “taste the meat not the heat” propane griller, I hope you enjoy these tips and recipes. One of the great joys of owning your own home is making a space for a little outdoor cooking. It can be hard to grill on an apartment balcony!

The Hearth, Patio & Barbecue Association ( recently shared these interesting facts for National Barbecue Month. You can see why grilling is so popular!

81% of Americans report that at least one aspect of grilling outside is easier than cooking indoors. The most convenient parts are cited as cleanup (49%) followed by the cooking process itself (40%).

The majority of adults (58%) agree that cooking out is more fun and relaxing than dining out and beneficial for avoiding travel (58%), dress codes (57%) and crowds (56%).

70% of Americans say cooking out gets them in a healthier routine, specifically by encouraging time spent outdoors instead of cooped up in the house. Outdoor cooking also encourages adults to make smarter food choices such as eating fresh rather than frozen foods (54% agreed) and cooking healthier food on the grill overall (40% agreed).


Get your tongs, spatulas, brushes, rubs, marinades, and skewers ready. Grilling doesn’t always have to be about meat. If it grows, you can grill it, and adding garden variety fruits and veggies can transform a BBQ experience. This Memorial Day…

memorial day 2016It’s hard to believe Memorial Day is just around the corner.  I always think of Memorial Day as the true arrival of summer.  I know the air will be filled with the smell of BBQs and kids playing, a fortunate reminder of how much we have to be thankful for in our community.

But during this Memorial Day, I’d like you to hold in your heart and mind those families throughout history who have paid the ultimate price for the freedom we’ll all enjoy this summer.  Those who have fallen in service to the military should not be forgotten among our celebrations.

Sadly, we do not have to look very far into the past to remember those who have died.  Right now, there are those in our community whose sons, daughters, husbands, and wives will not be joining them this year.  I encourage you to show your respect and appreciation for those families.  Invite them to enjoy fellowship with you this Memorial Day.   Honor them and honor their soldiers by holding up a mirror to show the generous, grateful community we live in.

May the Fourth Be With You

Star Wars DayMay 4th has become commonly known as Star Wars Day. And who could be surprised? The words, “May the 4th” seem to beg the rest of the catchphrase be uttered. Regardless of whether you prefer Star Wars or Star Trek, or if you are even a sci-fi aficionado at all, the influence of George Lucas’ Star Wars on pop culture is undeniable.

“May the Fourth be with you” was first used by Margaret Thatcher’s political party to congratulate her on her election on May 4th, 1979, and the saying quickly caught on. However, the first celebration of May 4th took place much later, at the Toronto Underground Cinema in 2001. This first official Star Wars Day’s festivities included a costume contest and a movie marathon. Fans’ favorite parodies of the franchise were also enjoyed, as were some of the most popular mash-ups and remixes. Since then, Star Wars Day has gained popularity and is celebrated by Star Wars Fans worldwide.

How to Celebrate Star Wars Day

The way you celebrate Star Wars day will depend on how well you know this cultural phenomenon. If you are a longtime fan of the franchise, you might want to get a group of friends together and attend one of the many Star Wars events organized in different parts of the world. Such events range from costume contests to museum exhibits to tours of space centers. And if you’re not feeling up to going out, there’s no reason why a Star Wars Day party organized by you at home should be any less fun. Movie marathons with friends, Star Wars trivia games and even Star Wars themed snacks (Death Star piñata, anyone?) will guarantee this day is full of fun as well as being very educational. “Vadering” another person has also become an extremely popular thing to do on this day, and the photos you take of this are sure to bring a smile to your face for years to come. Because Star Wars itself is such an enormous topic, the ways of celebrating the day dedicated to it are virtually endless. So choose one, have fun, and May the 4th be with you!

The Month of May is….Burger Month! Delicious!!

May is Hamburger MonthWhere’s the beef? There’s plenty of it around all through Hamburger Month, along with buns, cheese, fries and pickles! While many other popular menu choices have a special day devoted to them, this fast food favorite gets a whole month of celebration.

Nobody seems to be certain when this meaty month was first launched. However, it is sponsored by White Castle, the oldest hamburger chain in the US, and supported by other chains and independent burger bars. All kinds of special events are organized each year to mark the occasion, including burger tastings, food festivals, giveaways and even a burger battle.

The perfect way to celebrate Burger Month, though, is to throw your own party. There are many sizzling burger recipes to choose from, including healthy choices like turkey or veggie burgers as well as the classic beef version, so get grilling now.  Make sure you let me know where the party is!  I love a good burger.  What is your favorite burger??

The community is invited to come out to Kingwood’s Town Center Park April 17, 2016, for the annual Dr. Scott Mosby’s Spring Car Show.

The community is invited to come out to Kingwood’s Town Center Park April 17, 2016, for the annual Dr. Scott Mosby’s Spring Car Show.

The annual Scott Mosby Spring Car Show will be held from 12:00 pm to 5:00 pm on Sunday, April 17, at Kingwood Town Center Park, 8 N. Main St.

The event will feature cars, trucks and motorcycles competing for top honors in a number of categories, including best paint, best engine, best military, best interior, best original and best in-progress as well as best of show and a peoples choice award.


The show will also feature live music with DJ Mark Linabury, as well as food and arts and crafts vendors.

Car Show Details:

Date: Sunday, April 17, 2016 (Rain date April 24th)
Location: Kingwood Town Center Park, 8 N. Main St.
Cost: Free to spectators

Dr. Scott Mosby is a local dentist and car and motorcycle enthusiast that began in high school.  This year, a donation will be made to Team Joseph – Helmet Awareness.

St. Patrick’s Day Recipe

Celebrate St. Patrick’s Day with Irish-inspired foods like corned beef and cabbage, shepherd’s pie and Irish soda bread.

Corned Beef and Cabbage

Inactive: 8 hr 20 min
Cook: 3 hr 30 min


For the brine:
1 cup kosher salt
1 cup brown sugar
1 1/2 tablespoons whole coriander
1 1/2 tablespoons whole mustard seeds
1 1/2 tablespoons whole black peppercorns
1 1/2 tablespoons whole allspice
4 sprigs fresh marjoram
4 sprigs fresh thyme leaves
2 bay leaves
1 (2 1/2 to 3 pound) brisket
3 tablespoons extra-virgin olive oil
1 onion, halved
6 carrots, coarsely chopped
1 head celery including leaves, coarsely chopped
1 head garlic, halved
3 sprigs fresh marjoram
2 bay leaves
1 small cabbage cut into 6 to 8 wedges

Herbed Root Vegetables:
2 tablespoons extra-virgin olive oil
2 tablespoons unsalted butter
1 pound new potatoes, scrubbed
1 pound baby carrots, trimmed and scrubbed
1 pound baby turnips, trimmed and scrubbed
1 pound baby parsnips, trimmed and scrubbed
Kosher salt and freshly ground black pepper

Herb Butter:
1/2 pound unsalted butter, softened
1/2 cup mixed chopped fresh herbs like thyme, mint, chives, parsley, or chervil
Kosher salt and freshly ground black pepper


For the brine:
Combine all the brine ingredients, except the brisket, in a large non-reactive bowl. Add the brisket (you may have to cut it into 2 pieces) and rub the spice mix into the meat. Pour cold water over until the meat is covered. Weight the brisket down with a small plate so that it is completely submerged; cover and refrigerate. The meat can be brined overnight or as long as 10 days. The longer the brining the more pickled the meat.

Heat the oven to 300 degrees F.

Heat a large pot or Dutch oven over medium-high heat and add the olive oil. Add the onion, carrots, celery, garlic, marjoram, and bay leaves and cook until starting to soften, about 10 minutes. Remove the meat from the brine and rinse it well. Set the meat on top of the vegetables and add water to just cover the meat. Bring to a boil skimming any foam that surfaces. Reduce the heat to a simmer, place the lid on the pot, and cook for 15 minutes. Add the cabbage pieces, cover, and put it into the oven; cook for 3 hours.

Remove the meat, cover it with foil, and let it rest for 20 minutes. Cut the fat off the corned beef, slice the meat against the grain, and serve it in shallow bowls with the cabbage wedges, some cooking liquid, and the Herbed Root Vegetables.

Herb Butter:
Put the olive oil and butter into a large pot over medium-high heat. Add the vegetables and toss to coat them well with the fat; season with salt and pepper. Add 1 cup water and bring to a boil. Lower the heat to a simmer, cover the pot, and cook until the vegetables are tender, about 20 minutes.

Meanwhile, make the Herb Butter by combining the soft butter and herbs together; season with some salt and pepper.

To serve, spread some Herb Butter in the bottom of a bowl. Add the hot vegetables and dot with more Herb Butter. Moisten with some of the cooking liquid and serve.

Yield: 6 to 8 servings
